I’m a working mum with two kids and a rescue greyhound. I haven’t got time for fancy food that takes hours to prepare.
But. I’m also a health nut, having spent the last 25 years and counting as a vegetarian and I want to eat well. So here I am.
These recipes are all adaptions of ones I’ve found over the years and have adjusted to be either quicker to make or taste better than the original.
My best advice is to get a bunch of dried herbs and spices (cumin, turmeric, paprika, garam masala, smoked paprika, rosemary, fennel seeds) and keep them on hand. They bring out the best in the vegetables, are good for you and mean you don’t need to use salt, dressings or excessive amounts of fat to make things taste good.
